The best chocolate in the world is more than comfort food. It is a gastronomic gem, an exquisite experience and a memorable moment, beautifully packaged and waiting to be unwrapped. Judging it on taste alone would be one-sided. Here is what it really means to be the finest chocolate — through history, ingredients, health and the craft of the chocolatier.

The short answer

There is no official world ranking — but the chocolates that juries, chefs and connoisseurs rate highest share the same traits: exceptional cocoa, 100% pure cocoa butter, little sugar, no alcohol, preservatives or artificial colors, and the hand of a master chocolatier.

French chocolate — small, intense, low in sugar — is widely regarded as among the very best. zChocolat’s 26 recipes are created by World Champion Chocolatier Pascal Caffet, made by hand in France and delivered by FedEx Express to 178 countries, in 1 to 3 days to most of the United States.

Origins

Where the best chocolate comes from

Chocolate was born in Mesoamerica — today’s Mexico and Central America — where cacao was cultivated thousands of years ago. The Maya prepared a thick, foamy and bitter drink from roasted cacao, and the Aztecs even used cocoa beans as currency.

Latin America remains one of the cradles of the world’s most aromatic cacao, from Venezuela to Ecuador, alongside Madagascar and West Africa.

Where it was perfected

While the Americas gave birth to chocolate, Western Europe perfected it. The best cacao beans still grow near the equator, but the countries that have invested the most time, ingenuity and craftsmanship in the finest chocolate are Switzerland, Belgium, Italy — and France.

Ingredients

World-class ingredients, nothing less

Cocoa beans are the soul of chocolate. The freshness, quality and balance of the ingredients — and how they are combined — are the first criteria when judging the finest chocolate.

Carefully selected cocoa origins

Most industrial chocolate blends anonymous beans from many sources, which dilutes the character of each variety. Fine chocolatiers choose their origins: zChocolat’s couvertures include a 70% dark chocolate blending Venezuelan and Madagascan cacao, and a 40% West African milk chocolate.

100% pure cocoa butter

The highest-rated chocolates use only pure cocoa butter. European rules allow chocolate makers to replace up to 5% of it with other vegetable fats — cheaper, but at the expense of texture and aroma. Every zChocolat recipe is made with 100% pure cocoa butter and no palm oil.

Piedmont hazelnuts for the praliné

World-class chocolatiers use world-class fillings. Hazelnuts from Piedmont, in northern Italy — protected by a geographical indication — are prized for their round shape and gentle, buttery flavor. zChocolat’s pralinés are made with slow-roasted Piedmont hazelnuts.

What they leave out

Four things the finest chocolates avoid

Taste is the most immediate way to judge chocolate. Most chocolate is pleasant and forgettable; only a few are unforgettable — and what they leave out matters as much as what they put in.

01

Alcohol

A liqueur filling masks the authentic flavor of the cocoa. Connoisseurs rarely recommend it.

02

Preservatives

Fine chocolate does not need them: it relies on fresh ingredients, careful storage and fast, temperature-controlled delivery.

03

Artificial colors

They only change the look of a chocolate. The best ones show the natural colors and textures of their ingredients.

04

Excess sugar

Sugar is cheaper than cocoa. The finest recipes let cocoa, fruit and caramelized nuts bring the sweetness instead.

zChocolat’s recipes contain no preservatives, no artificial coloring, no alcohol and no palm oil — see every recipe on our Flavors page.

Chocolate & health

The healthiest chocolate: your questions

Chocolate can be enjoyed almost anytime. Choosing the right one on a diet is harder — and dark chocolate generally has more to offer than milk or white chocolate.

What is the best chocolate to eat on a diet?

Dark chocolate with 70% cocoa or more. Most chocolate contains sugar, but the higher the cocoa content, the lower the sugar. Enjoy it in moderation.

Is chocolate suitable for a keto diet?

Somewhat surprisingly, yes, in small amounts: very dark chocolate is low in sugar and rich in cocoa. Check the label for carbohydrates.

What is the best chocolate for a vegan diet?

Cocoa and cocoa butter are plant-based, but other ingredients may not be. Choose a dark chocolate of 70% or more and check that no milk, butter or other animal ingredient is listed. zChocolat offers a 100% vegan selection.

Are “diabetic chocolates” a good alternative?

Not really: they are often expensive and can still be high in fat and calories. A high-quality chocolate of 70% cocoa or more remains the safer choice, in moderation and after checking the label. For an occasional treat, zChocolat’s Alizé 0% Sugar truffles contain no added sugar.

À la française

A case for French chocolate

For centuries, the French palate has been demanding about cuisine and wine; over the last decades, the same has become true of chocolate. Today French chocolate is considered among the finest in the world — and zChocolat has helped carry it across the globe since 1999.

Impeccable savoir-faire

The best ingredients are not enough. Tempering, roasting, caramelizing and preparing each filling takes finesse — French savoir-faire is in every step of every zChocolat recipe.

Small pieces, intense flavors

The French prefer dark chocolate and small pieces of about 10 grams, with less cream, sugar and butter. zChocolat’s signature bite-sized pieces come in 26 recipes — the Numbered Collection, N°0 to N°24, plus the signature Z — all handmade in France.
