This summer, I bet with my team that we could create an even better dark couverture with a stronger personality. We made it happen. While some of you were on vacation relaxing, we worked hard and changed the formula of our single-origin 70% Venezuelan dark couverture for a blend 70% Madagascar & Venezuela for all our dark chocolates. It is now stronger, more complex with notes of honey and citrus and a longer finish. Our chocolate #10 has no filling, it is made of pure solid new dark couverture mixed with Valencia almonds – it is my favorite chocolate and has no competition.
